Quick recipe of stewed rice with zucchini and sausages

Sometimes we do not have time to cook but we do not want to eat a sandwich or a cereal either. Sometimes we do have time but we are just lazy 😛

The good thing for these occasions is that there are easy, fast and delicious recipes that can get us out of trouble and that can also make us look good in front of surprise guests .

This recipe for stewed rice is perfect for those moments.

You use the white rice from the previous day, a piece of zucchini, some sausages, carrots, tomatoes, nothing fancy .

What matters is that you know what the dish is and how to do it and then simply replace the ingredients that come out here with the ones you have in your refrigerator. Pan comido.

Recipe of stewed rice with zucchini and sausages

Ingredients:

  • 2 cups cooked white rice from the previous day
  • 2 jumbo sausages
  • ½ zucchini
  • 1 small carrot
  • ½ tomato
  • ¼ onion
  • ¼ pepper
  • A piece of celery stalk about 5 cms
  • A piece of leek also about 5 cms
  • 1 tablespoon of concentrated tomato
  • Salt
  • Pepper

Preparation:

Chop the onion, tomato, carrot, celery and pepper in small cubes. The leeks on fine wheels.

Zucchini and sausages can be chopped a little bigger.

Heat olive oil in a deep pan or pot and start sautéing everything in this order: the onion, the pepper, the carrot, the celery, the tomato, the leek, the zucchini and the sausages.

Let cook for 5 minutes. Add salt and pepper.

Put the spoonful of tomato concentrate and a splash of water (not more than ¼ cup) and let it boil a couple of minutes. It should be slightly brownish.

Add white rice and stir everything well.

Cook another couple of minutes and remove from heat.

When serving your rice stewed with zucchini and sausages you can grate parmesan cheese on top, or add a splash of extra virgin olive oil, or both.
